A Design Guide
The great cake debate, settled the honest way: it depends on your design.
Buttercream and fondant each earn their place on a wedding cake. Buttercream wins on flavor and soft, romantic texture, it is what most guests hope to taste. Fondant wedding cakes win on architecture: a flawless, porcelain-smooth canvas for sculptural designs, crisp edges, and intricate detail work. Many of the best cakes use both, buttercream beneath, fondant accents where the design demands precision. And if you’re dreaming darker, see how both finishes carry deep color in my black and moody statement cakes guide.
At Sweet E’s in Provo, every cake is designed around your vision first, then I choose the finish that gets it there. Browse the gallery to see both in action, or tell me what you’re dreaming of.

Buttercream: Soft, Romantic, Delicious
Buttercream is the flavor-first choice, silky, rich, and the base of every pairing on my signature menu. Design-wise it is more versatile than it gets credit for: hand piping with vintage detail, rustic texture, smooth modern finishes, painted color, and florals both fresh and sugar. See my buttercream blooms and vintage piping collections for real Utah weddings.
Fondant Wedding Cakes: Sculptural, Precise, Dramatic
Fondant drapes a cake in a perfectly smooth surface that buttercream cannot quite match, ideal for bold geometry, sculpted accents, statement bows, and designs where crisp architecture is the point. Browse sculpted accents and statement bows to see the look. The classic concern, flavor, is solved by what lies beneath: cake and fillings from the same menu, with buttercream underneath the fondant layer.
How Utah’s Seasons Vote
Utah’s dry summers and mountain venues are part of the decision. High-heat outdoor receptions ask more of buttercream; I plan delivery timing and on-site styling around it. Cool-season and indoor weddings give you total freedom. Whatever the season, I deliver and style your cake on site so the finish is flawless for photos, and every multi-tier cake includes a tasting where I settle the finish question together. Pricing is identical to start: two-tier from $450, three-tier from $650, see the 2026 price guide and pricing page; intricate detail work adds artist hours whichever finish you choose.

Buttercream vs. Fondant FAQ
Which is better for a wedding cake, buttercream or fondant?
Neither is “better”, buttercream is beloved for flavor and soft, romantic texture, while fondant gives an ultra-smooth, sculptural finish. The right choice depends on your design, venue, and taste priorities.
Does buttercream hold up at outdoor Utah weddings?
Summer heat is buttercream’s main challenge. Timing, shade, and smart delivery planning matter, I deliver and style cakes on site so your finish looks its best when the moment arrives.
Can you do detailed designs in buttercream?
Yes, hand piping, textured finishes, painted palettes, and fresh or sugar florals all work beautifully in buttercream. Browse my gallery’s vintage piping and buttercream blooms collections for real examples.
How do we decide which finish is right for us?
Bring your inspiration photos to your $50 tasting, it doubles as a design consultation, and I’ll recommend the finish that suits your design, season, and venue.
