A Floral Design Guide

Sculpted by hand or cut from the garden, both belong on a wedding cake.

A sugar flowers wedding cake is decorated with blooms sculpted by hand from sugar paste, shaped and dried ahead of time so every petal holds its form. Fresh flowers are real stems, styled on the cake at delivery. Choose sugar flowers for lifelike, lasting blooms in any color or season, and fresh flowers when you want the cake to echo your bouquet exactly. Most couples invest $650 to $1,200 in their wedding cake, and hand-sculpted florals usually place a design above the starting price for its size.

Both are part of my work, and neither is the wrong answer. You can see sculpted blooms on real cakes in my sugar flowers gallery, real stems in the fresh florals gallery, and every size and serving count in the 2026 price guide. If you would rather every petal be edible, my guide to buttercream flower cakes covers the third option.

What Makes a Sugar Flowers Wedding Cake Special

Sugar flowers are the most sculptural thing I make. Each petal is rolled thin, shaped, and left to dry before the flower is assembled, which is why a sugar rose can open exactly as wide as you want and hold that shape through a warm reception. Because nothing is picked from a field, the palette is entirely up to you: dusty plum in June, blush peonies in December, or one soft color matched to your linens.

They also give a cake a sense of permanence. A cascade of sugar blooms reads as part of the design rather than something added to it, and it looks the same in the last photo of the night as it did in the first. Sugar flowers are made to be admired rather than eaten, so they lift off before the cake is cut, and a single bloom can be kept long after the day.

When Fresh Flowers Are the Better Choice

Fresh flowers make the most sense when the cake should feel like part of your florals. A few garden roses tucked between the tiers can repeat your bouquet stem for stem, and loose greenery softens a tall cake the same way it softens a ceremony arch. They suit relaxed garden weddings, mountain venues and couples whose flowers are already the centerpiece of the room.

Fresh blooms are styled on the cake at delivery, so they arrive looking their best when guests walk in. Not every flower belongs near food, so we choose the stems together in the consultation and keep that in mind from the start. If you love both looks, a design can mix sugar flowers for the focal blooms with fresh greenery around them.

Sugar Flowers Wedding Cake Pricing

Florals are custom design work, so expect them to add to your quote. The prices below are starting points for each size, set by tier count and servings, before any design is added. Sugar flowers are sculpted petal by petal, and a full cascade takes far more studio time than a single cluster, so most sugar flower designs land above the starting price for their size. I quote the florals, sugar or fresh, during the design consultation.

Cake Starts At Servings
Two tier $450 20 to 60
Three tier $650 48 to 115
Four and five tier $875 85 to 210

Every multi-tier wedding cake includes the tasting, the design consultation and a complimentary mini cake on your first anniversary. Delivery is quoted by location, and Utah charges 3% sales tax. The full breakdown is on the pricing page, and floral cakes of every style are in the cake gallery. It is also why you never need to freeze your top tier; my guide on why you do not need to preserve wedding cake explains how the anniversary cake works.

Sugar Flower and Fresh Flower Questions

Should I choose sugar flowers or fresh flowers for my wedding cake?

Choose sugar flowers for lifelike, sculptural blooms in any color or season that look the same all night. Choose fresh flowers when you want the cake to repeat your bouquet and feel part of your florals. Many designs mix the two, with sugar focal blooms and fresh greenery.

How much does a sugar flowers wedding cake cost in Utah?

Most couples invest $650 to $1,200 in their wedding cake, and hand-sculpted sugar flowers usually place a design above the starting price for its size. Two tiers for 20 to 60 guests start from $450, three tiers for 48 to 115 from $650, and four and five tiers for 85 to 210 from $875. Delivery is quoted by location and 3% sales tax applies.

Are sugar flowers on a wedding cake edible?

Sugar flowers are made from sugar paste, but they dry firm and are made to be admired rather than eaten. They lift off before the cake is cut and served, and because they keep their shape, a single sugar bloom can be saved as a keepsake from the day.

Can sugar flowers match my wedding bouquet?

Yes. Sugar flowers can be sculpted in almost any variety and tinted to any shade, so they can follow your bouquet, linens or season closely. Share photos of your florals before the design consultation and I will sketch the blooms around them.

Are fresh flowers safe to put on a wedding cake?

Fresh flowers can be used beautifully on a wedding cake, but not every bloom belongs near food. We choose the stems together during the design consultation with that in mind, and I style them on the cake at delivery so they look fresh when your guests arrive.
